Now that the Los Angeles city council has passed a resolution encouraging residents to observe "Meatless Mondays" for health and environmental reasons, more people will be looking for vegetarian recipes and meatless meal ideas. By going vegetarian, at least for one day a week, you'll not only help combat climate change, conserve resources, and reduce your risk for heart disease, diabetes, cancer, and other common chronic illnesses; you'll also save lives. And once you see how easy it is to go meatless on Mondays, you'll want to extend your efforts throughout the week, which will have an even greater impact.
